This is a know limitation. A set of trimming tools based on geometry booleans are planned T71950, which won't have this limitation and they will work as expected. The mask slice option should be in situations where is more convenient to draw a mask selection than a box/lasso selection using the viewport projection (like a mesh with a lot of intersecting shapes), but it was not designed to be used as a hard surface trimming tool.
