I've noticed that Sculpting characters with the Multires Modifier on leads to strange Material displays both in Eevee and Cycles.
Somehow it messes with the Base Color, Roughness and Alpha? Note how this only happens when "Sculpt Base Mesh" is disabled.
I tried reducing the scene to its basics and managed to replicate it on a simple cube.

I usually use 3.0 but have also tested it on the experimental 3.1.0, to the same results.

.Open attached example .blend file
.Select cube Object
. Make sure Multires modifier's Sculpt is on 1 and "Sculpt Base Mesh" is disabled
. switch from Object to Sculpt Mode
.notice how the material changes (takes on the background's color)

It seems quite difficult to resolve. This issue is reported many times, already since 2.8. See https://developer.blender.org/T63581. I kept asking to give this task high priority. It seems abandoned since nobody is answering my requests anymore to keep us informed. @Dalai Felinto (dfelinto) Please give this issue high priority!!!

Thank you Simone. I've noticed the issue for a while now but didn't know it was that persistent. Should it be merged with the task you mentioned?

Maybe check out T93226 . This is a feature that is going to be implemented. Probably what causes that is UV support with Multires not being ready yet.

Look at: Medium term, Item 5. Sculpt on UV unwrapped mesh.

@J. W. (blend_ellie) Probably it should be merged with T63581 but I'm not in a position to make such a decision.
@WMROssi (Anubis) I hope T93226 would solve it but I'm not sure. @Joseph Eagar (joeedh) could you give us some feedback on this?
